
Protein Coffee Pancakes
Flourless oat pancakes with 48g of protein a serving. Blender batter, no refined sugar.

You'll Need
- Blender or food processor
- Non-stick pan
- 1/4 cup measure
Ingredients
- ✓1 cup rolled oats
- ✓4 scoops French Vanilla Protein Coffee (two 30g servings)
- ✓2 large eggs
- ✓1 cup plain Greek yogurt
- ✓1/2 cup milk of choice
- ✓1 tsp baking powder
- ✓1/2 tsp cinnamon
- ✓A pinch of salt
Instructions
- 1Blend the oats alone until they look like coarse flour, about 30 seconds.
- 2Add everything else and pulse until just smooth. Let the batter sit 5 minutes - it thickens as the oats hydrate.
- 3Heat a non-stick pan over MEDIUM-LOW. Not medium. This is the whole recipe.
- 4Pour rounds of about 1/4 cup. Cook 3 to 4 minutes until bubbles form and the edges look dry, then flip and give it 2 more.
- 5Stack and serve with berries and a little maple.
Protein pancakes have a reputation for coming out either rubbery or burnt, and it's almost always the pan being too hot. Cook these low and slow and you get something genuinely fluffy carrying 48g of protein a serving, with no flour and nothing added to sweeten the batter.

Why This Works
Medium-low heat is not a suggestion. Whey contains lactose, and lactose browns fast - at normal pancake heat the outside is dark before the inside has set, which is where both the burnt taste and the rubbery middle come from. Drop the heat and add a minute per side and the problem disappears entirely.
Letting the batter rest five minutes matters almost as much. Blended oats keep absorbing liquid after mixing, so batter that looks too thin at first is exactly right by the time the pan is hot. Pour it immediately and you get flat, spreading pancakes.
Tips From Our Kitchen
- Wait for real bubbles across the surface before flipping. These are more delicate than flour pancakes and they tear if you rush it.
- They freeze well - cool flat, stack with parchment between, toast from frozen.
- A quarter-cup measure gives you eight even pancakes and takes the guesswork out.
- If the batter thickens too much while you cook, loosen it with a splash of milk.
Swaps & Variations
- Mocha pancakes: Mocha Protein Coffee and 1 tbsp cocoa powder.
- Matcha pancakes: High Protein Matcha. Pale green and excellent with berries.
- Dairy-free: coconut yogurt and almond milk - expect a slightly flatter pancake.
- Banana: mash one ripe banana into the batter and drop the milk to 1/3 cup.
Common Questions
Why do my protein pancakes burn on the outside and stay raw inside?
The pan is too hot. Whey contains lactose, which browns much faster than flour, so protein pancakes need medium-low heat and about a minute longer per side than a normal pancake.
How much protein is in a serving?

Are they gluten-free?
Yes, if your oats are certified gluten-free. There's no wheat flour in the recipe at all.

Overcooking, or over-blending after the wet ingredients go in. Pulse until just smooth and pull them off the heat as soon as the second side is set.
