
Creamy Iced Mushroom Coffee
A creamy, calming iced mushroom coffee with collagen protein and a dusting of cinnamon.

You'll Need
- Drip machine, pour-over cone or French press
- Tall glass

Ingredients
- ✓2 tbsp Protein Mushroom Coffee grounds (one serving)
- ✓1 cup water, for brewing
- ✓1/2 cup oat milk (or milk of choice)
- ✓Ice cubes
- ✓A pinch of cinnamon (optional)
Instructions
- 1Brew the 2 tbsp of Protein Mushroom Coffee with 1 cup of water however you normally make coffee - drip, pour-over or French press.
- 2Let it cool a few minutes, then chill it in the fridge or pour it over a throwaway glass of ice to drop the temperature fast.
- 3Fill a glass with fresh ice, pour in the chilled coffee, and top with oat milk.
- 4Dust with cinnamon and stir.

Why This Works
This is real ground coffee, not an instant powder, and that is the whole point of it. You brew it exactly the way you already make coffee. The collagen and the mushroom extracts are water-soluble, so they come through into the cup with the coffee rather than sitting at the bottom of a shaker.
Chilling before you pour matters more than it sounds like it should. Hot coffee straight over ice melts half of it on contact, and you end up drinking something watery. Ten minutes in the fridge, or a quick pour over a first glass of ice you then discard, keeps the cup tasting like coffee all the way down.

Tips From Our Kitchen
- Brew a full pot on Sunday and keep it in a sealed jar in the fridge. It holds four days and turns this into a ten-second drink.
- Freeze some of the brewed coffee into ice cubes. Nothing waters down.
- Oat milk is the best match here - it's naturally a little sweet and softens the earthiness of the mushrooms.
- Grind size and brew method change the strength a lot. If it tastes thin, use a finer grind or a longer steep rather than more grounds.
Swaps & Variations
- Cold brew version: steep the 2 tbsp in 1 cup of cold water overnight in the fridge, then strain. Smoother and less acidic, and there's no chilling step.
- Vanilla mushroom latte: a quarter teaspoon of vanilla extract with the oat milk.
- Salted maple: a pinch of salt and a teaspoon of maple syrup. There are no sweeteners in the grounds, so any sweetness is yours to add.
- Coconut cream float: two tablespoons of canned coconut cream on top instead of oat milk.

Do I brew this or mix it in a shaker?
You brew it. Protein Mushroom Coffee is USDA organic ground arabica, not an instant powder, so it goes in your drip machine, pour-over or French press just like any other coffee. It will not dissolve in a shaker.
How much protein is in it?
6g of collagen protein per serving from the coffee, plus about 2g from the oat milk - roughly 8g in the finished drink. Collagen is a different protein from the whey in our Protein Coffee line, and it's used to support skin, joints and connective tissue.
How many calories?
About 87 with a half cup of oat milk. The coffee itself is only 42 calories per serving with zero sugar, which makes this the lightest drink in the recipe collection.
How much do I use per cup?
Two tablespoons of grounds to one cup of water - that's one serving. There are 30 servings in a bag, which works out to about $1.20 a cup.
Can I drink it hot instead?
Absolutely. Brew it and drink it straight, or add warm milk for a mushroom latte. The iced version just adds the chilling step.
