You'll Need

  • Small saucepan or microwave-safe jug
  • Mug
  • Small whisk or milk frother

Ingredients

  • ✓2 scoops Hazelnut Protein Coffee (one 40g serving)
  • ✓1 cup 2% milk
  • ✓1 tbsp unsweetened cocoa powder
  • ✓2 tbsp hot water
  • ✓Pinch of salt

Instructions

  1. 1Put the two scoops, the cocoa and the pinch of salt in your mug. Add the 2 tablespoons of hot water and whisk into a thick, glossy paste. Cocoa is stubborn and this is the only reliable way to get it lump-free.
  2. 2Heat the milk until it steams and you see the first small bubbles at the edge of the pan - around 150F. Do not let it boil.
  3. 3Pour the hot milk into the mug in a slow stream while whisking continuously. Slow and whisking, not fast and stirred.
  4. 4Whisk another 10 seconds until there is a light foam on top. Drink straight away.

Hazelnut and chocolate is a combination nobody needs convincing about. What is harder is getting it into a hot drink that carries 31g of protein without the whey curdling into strings the moment it hits the mug.

The rule is simple and it is the only thing that really matters here: never pour whey protein into liquid that is actively boiling. Steaming is fine, simmering is fine, rolling boil is not. Get that right and this comes out as smooth as anything you would be handed at a counter.

Unsweetened cocoa is doing the chocolate work, so there is no added sugar in the mug at all - the 12g of sugar is lactose from the milk.

Calculated from one 40g serving of Hazelnut Protein Coffee (175 cal, 22g protein, 0g sugar, 100mg sodium), 1 cup of 2% milk and 1 tablespoon of unsweetened cocoa. All 12g of sugar is lactose occurring naturally in the milk - there is no added sugar in this recipe at all, since both the powder and the cocoa are unsweetened.

Why This Works

Whey protein denatures around 160F. Past that point the protein strands unravel and clump together, which is what people are seeing when they say their hot protein coffee went stringy or grainy. Milk that is steaming with bubbles just forming at the edge sits at roughly 150F, comfortably below the threshold, and stays hot enough to drink for ten minutes.

The cocoa paste step is not fussiness. Cocoa powder is hydrophobic - it repels water and floats - so dropped into a full mug it will sit on the surface in dry clumps no matter how long you stir. Two tablespoons of hot water worked into a paste first hydrates it completely.

The pinch of salt does the same thing here that it does in any chocolate recipe. It suppresses bitterness perception, which lets you taste the hazelnut and the cocoa rather than the astringency, without adding a single gram of sugar.

Tips From Our Kitchen

  • Steam, do not boil. This is the whole recipe in three words.
  • A cheap handheld milk frother turns this from good to genuinely cafe-like in ten seconds.
  • Warm the mug with hot water first and tip it out. The drink stays hot noticeably longer.
  • Dutch-process cocoa is smoother and less acidic than natural cocoa if you have the choice.
  • If it went stringy, the milk was too hot. There is no fixing it after the fact - start again cooler.

Swaps & Variations

  • Dairy-free: oat milk froths best and suits hazelnut. Barista oat if you can get it.
  • Richer: half milk, half single cream. Adds about 90 calories.
  • Sweeter: 1 tsp maple or honey. The powder and the cocoa are both unsweetened.
  • Mocha mint: a drop of peppermint extract.
  • No cocoa: leave it out for a straight hot hazelnut latte at about 297 calories.

Common Questions

Why did my protein coffee go stringy?

The milk was too hot. Whey protein denatures and clumps above about 160F. Heat the milk only until it steams with the first bubbles at the edge, then pour it slowly while whisking.

Is there any added sugar in this mocha?

None. The 12g of sugar is lactose from the milk. Hazelnut Protein Coffee contains no sweeteners and reads 0g of sugar on its panel, and the cocoa is unsweetened.

How much protein is in it?

31g - 22 from the powder and the rest from a cup of 2% milk.

Why is the cocoa clumping on top?

Cocoa repels water and floats. Make a paste with the cocoa, the powder and two tablespoons of hot water before the milk goes anywhere near the mug.

Which mushrooms are in Hazelnut Protein Coffee?

Four - Lion's Mane, Wild Chaga, Maitake and Reishi - as fruiting body extract standardised to no less than 30% beta-glucans.
