
Hot Chocolate Protein Mocha
A thick, cocoa-dark mug with 31g of protein. Dessert energy, zero added sugar.

Ingredients
- ✓2 scoops Mocha Protein Coffee (one 30g serving)
- ✓1 cup milk of choice (2% dairy, oat or almond)
- ✓1 tbsp unsweetened cocoa powder
- ✓A pinch of flaky salt
Instructions
- 1Warm the milk until it steams but never lets a bubble break the surface. Take it off the heat.
- 2Whisk the cocoa powder into two tablespoons of the warm milk until it's a smooth dark paste with no dry specks.
- 3Whisk in both scoops, then the rest of the milk, until glossy and thick.
- 4Pour into a mug, finish with the pinch of salt.
This is the one that tastes like it shouldn't count. Real cocoa against real arabica, thick enough to feel like a dessert, and it lands at 31g of protein with nothing added to sweeten it. Made right, it's closer to a drinking chocolate than a latte.

Why This Works
Heat is the only thing that can ruin this. Whey protein starts to seize somewhere around a hard simmer, and once it does you get fine threads through the drink that no amount of whisking fixes. Warm the milk until it steams, then pull it off the heat before the powder goes in. Hot enough to be a hot chocolate, not hot enough to break.
Blooming the cocoa in a little warm milk first is the second half. Cocoa powder is stubbornly hydrophobic - dumped into a full mug it floats in dry pockets. Two tablespoons of milk and thirty seconds of whisking opens it up, and the chocolate flavour goes noticeably deeper.
Tips From Our Kitchen
- The pinch of salt is not optional if you want it to taste sweet. Salt suppresses bitterness, which is what reads as sweetness here.
- An immersion blender or milk frother gives you the thick foam cap. A regular whisk gets you 90% of the way.
- If it ever does clump, pour it through a small sieve on the way into the mug. Nobody will know.
- Full-fat oat milk makes the richest dairy-free version by a wide margin.
Swaps & Variations
- Peppermint mocha: two drops of peppermint extract, stirred in at the end.
- Spiced: a pinch of cinnamon and the smallest amount of cayenne makes a Mexican-style hot chocolate.
- If you want it sweet: a teaspoon of maple syrup or honey. There are no sweeteners in the powder.
- Thinner and more latte-like: drop the cocoa to a teaspoon and add 1/4 cup more milk.

Can I microwave the milk?
Yes, and it's actually easier to control. Heat it in 30-second bursts until it steams, then stir in the powder. The thing to avoid is boiling - whey clumps in liquid that's too hot.
How much protein is in this hot protein mocha?
31 grams - 22g from one 30g serving of Mocha Protein Coffee, about 8g from the cup of milk, and a gram from the cocoa. With unsweetened almond milk it's 24 grams.
How many calories?
243 with 2% milk, or 161 with unsweetened almond milk. For comparison, a medium coffee shop hot chocolate runs 400 or more with about 45g of sugar.
Is there caffeine in it?
About 40mg from the powder, roughly half a standard cup of coffee, plus a small amount naturally present in the cocoa. It's a mild one - fine in the evening for most people.
Why did mine come out grainy?
Almost always the milk was too hot. Let it cool a minute and whisk again. Next time, pull it off the heat as soon as it steams and bloom the cocoa before the powder goes in.
