You'll Need

  • French press, pour-over cone or drip machine
  • Milk frother or a jar with a lid
  • Wide mug

Ingredients

  • 2 tbsp Protein Mushroom Coffee grounds (one serving)
  • 3/4 cup water, for brewing
  • 3/4 cup milk of choice (2% dairy, oat or almond)
  • A pinch of cinnamon or nutmeg

Instructions

  1. 1Brew the 2 tbsp of grounds with 3/4 cup of water. Less water than a normal cup - you want it strong enough to stand up to the milk.
  2. 2Warm the milk until it steams. Don't let it boil.
  3. 3Froth it for 20 to 30 seconds, until the volume has roughly doubled and the foam is fine rather than bubbly.
  4. 4Pour the coffee into a wide mug, then pour the milk in from a height so the foam settles on top.
  5. 5Dust with cinnamon or nutmeg.

Why This Works

Brew it short. Three quarters of a cup of water instead of a full cup gives you a concentrated base, and that matters because milk mutes coffee fast - a normally brewed cup topped with milk tastes like weak milky water. Every cafe latte starts from something stronger than a drip cup, and this is the same principle without an espresso machine.

Froth to fine foam, not big bubbles. Twenty to thirty seconds is usually the sweet spot; go longer and you get a stiff meringue that sits on top instead of folding into the drink. If you don't own a frother, warm milk in a jar with a tight lid and shake it hard for 30 seconds, then microwave it 20 seconds to set the foam.

Tips From Our Kitchen

  • A wide mug over a tall one. More surface for the foam, which is most of the pleasure.
  • Oat milk froths best of the dairy-free options by a wide margin. Almond is thinnest.
  • Warm the mug with hot water first and tip it out. A cold mug drops the temperature immediately.
  • Brewing a bigger batch and reheating gently works fine - just don't boil it.

Swaps & Variations

  • Mushroom mocha: whisk 1 tsp of unsweetened cocoa into the hot coffee before the milk.
  • Spiced: a cinnamon stick and two cardamom pods steeped in the milk as it warms.
  • Higher protein: shake 2 scoops of Mocha Protein Coffee into the cooled brew for 34g total.
  • If you want it sweet: a teaspoon of maple or honey. There are no sweeteners in the grounds.
