
Matcha Protein Chia Pudding
Two jars, 23g of protein and 8g of fibre each, made in four minutes the night before.

You'll Need
- Two small jars with lids

Ingredients
- ✓2 scoops High Protein Matcha (one 30g serving)
- ✓1 1/4 cups milk of choice (2% dairy, oat or almond)
- ✓1/4 cup chia seeds
- ✓1/4 cup plain Greek yogurt
- ✓A pinch of salt
- ✓Berries or pistachios, to top
Instructions
- 1Whisk the matcha powder into the milk first, until completely dissolved. Nothing else goes in yet.
- 2Whisk in the yogurt and salt, then the chia seeds.
- 3Leave it 5 minutes, then whisk again. This second whisk is what stops the seeds settling into a lump at the bottom.
- 4Divide between two jars, cover, and refrigerate at least 4 hours or overnight.
- 5Top with berries or chopped pistachios before serving.

Why This Works
The chia-to-liquid ratio is roughly one part seeds to five parts liquid, which sets to a spoonable pudding rather than a drink or a solid block. Less liquid and it goes stiff and gluey overnight; more and it never sets at all. It's the one measurement in the recipe worth being accurate about.

Common Questions
Why did my chia pudding stay liquid?
Either not enough chia for the liquid, or not enough time. The ratio here is 1/4 cup chia to 1 1/4 cups milk, and it needs at least 4 hours. If it's still thin after that, whisk in another tablespoon of chia and give it another hour.
Why are the seeds all at the bottom?
The five-minute second whisk was skipped. Chia gels fast and sinks in the first few minutes - one more stir once it starts thickening keeps everything suspended.
How much protein is in it?
