Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup almond flour
  • 4 scoops High Protein Matcha (two 30g servings)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup white chocolate chips (optional)

Instructions

  1. 1Heat the oven to 350F and line two trays with parchment.
  2. 2Blend the oats to a coarse flour, then stir together with the almond flour, matcha, baking soda and salt.
  3. 3Whisk the coconut oil, maple syrup, egg and vanilla in a second bowl.
  4. 4Combine, then fold in the white chocolate. The dough will look loose - that's right.
  5. 5Chill 15 minutes. This is the step people skip and then wonder why the cookies spread flat.
  6. 6Scoop 16 balls, flatten slightly, and bake 10 to 12 minutes until the edges are set but the centres still look soft.

Baking with matcha usually means watching the colour turn from green to army-drab in the oven. These stay green because the bake is short and the temperature is moderate, and the ceremonial-grade matcha in the powder is sweet enough not to need masking. Why This Works

Matcha's colour comes from chlorophyll, and chlorophyll breaks down with prolonged heat. Ten to twelve minutes at 350F is short enough that the cookies set before the green goes. Push them to fifteen minutes and you'll get a browner, duller cookie that also tastes flatter.

Almond flour is here for fat and structure. Oats alone give you something closer to a flapjack, and protein powder alone gives you something dry - the almond flour sits between them and keeps the middle soft. It's also why the dough looks too loose before chilling and firms up perfectly after.

  • Lower fat: replace half the coconut oil with 3 tbsp Greek yogurt. Softer, more cake-like.
  • Flax egg works if you need it, though the whey still contains milk protein.
