
Mocha Protein Brownies
Genuinely fudgy, not cakey, with 8g of protein a square and coconut sugar instead of white.

Ingredients
- ✓1/2 cup melted butter or coconut oil
- ✓1/2 cup coconut sugar
- ✓2 large eggs, room temperature
- ✓1 tsp vanilla extract
- ✓1/2 cup unsweetened cocoa powder
- ✓4 scoops Mocha Protein Coffee (two 30g servings)
- ✓1/2 cup all-purpose flour
- ✓1/2 tsp baking powder
- ✓1/4 tsp salt
- ✓1/3 cup dark chocolate chunks
Instructions
- 1Heat the oven to 350F. Line an 8x8 tin with parchment, leaving overhang.
- 2Whisk the melted butter and coconut sugar together for a full minute, until it looks glossy. Let it cool slightly.
- 3Beat in the eggs one at a time, then the vanilla. Keep beating 30 seconds - this is what gives you the crackly top.
- 4Whisk the cocoa, protein coffee, flour, baking powder and salt together in a separate bowl, then fold into the wet mixture. Fold in the chocolate chunks.
- 5Spread into the tin. Bake 20 to 24 minutes - the centre should still look slightly underdone.
- 6Cool completely in the tin before cutting. This is not optional if you want clean squares.

Why This Works

- Underbaking is the goal. Twenty minutes is usually right; twenty-four is the outside limit.
Swaps & Variations
- Lower sugar: drop the coconut sugar to 1/3 cup and add 2 tbsp more butter. Less sweet, still fudgy.
- Espresso brownies: add 1 tbsp instant espresso to the dry mix for a much stronger coffee note.
- Salted: flaky salt across the top before baking. Best version, honestly.
- Dairy-free: coconut oil for the butter and dairy-free chocolate. The whey still contains milk protein.
