You'll Need

  • Drip machine, pour-over cone or French press
  • Blender
  • Wide mason jar or tall glass

Ingredients

  • 2 tbsp Protein Mushroom Coffee grounds (one serving)
  • 1 cup water, for brewing
  • 1 frozen banana
  • 2 tbsp almond butter
  • 1/2 cup plain Greek yogurt
  • 1/2 tsp cinnamon
  • 1/2 cup ice

Instructions

  1. 1Brew the 2 tbsp of Protein Mushroom Coffee with 1 cup of water - drip, pour-over or French press.
  2. 2Chill it completely. Fastest way is to pour it into a shallow bowl and freeze it 10 minutes.
  3. 3Put the chilled coffee in the blender first, then the yogurt, almond butter, banana, cinnamon and ice.
  4. 4Blend 45 seconds until smooth and creamy.

Mushroom coffee is real ground arabica, so this one starts at the coffee machine rather than the blender. Worth it - you get all five functional mushrooms and the collagen in a smoothie that drinks like a coffee milkshake, and the L-theanine gives it a calmer edge than a straight espresso shake.

Why This Works

Chill the coffee before it goes near the blender. Warm coffee melts the ice on contact and you end up with something watery and lukewarm - the worst of both. Ten minutes in a shallow bowl in the freezer is enough, or brew it the night before and keep it in the fridge.

Greek yogurt is doing the heavy lifting on protein, because Protein Mushroom Coffee carries 6g of collagen rather than the 22g of whey in our coffee and matcha. Tips From Our Kitchen

  • Brew a pot at the weekend and freeze it in an ice cube tray. Then this becomes a two-minute smoothie with no dilution at all.
  • Cinnamon does more here than it looks like it should - it rounds off the earthiness of the mushrooms.
  • Full-fat Greek yogurt makes it noticeably creamier. Non-fat makes it tangier and lighter.
  • Cold brew the grounds overnight instead if you'd rather skip the chilling step entirely.

Swaps & Variations

  • Higher protein: add 2 scoops of Mocha Protein Coffee for a 47g monster.
  • Dairy-free: coconut yogurt instead of Greek. You'll drop to about 16g of protein.
  • Date-sweetened: two pitted Medjool dates if your banana wasn't ripe enough.
  • Mocha mushroom: 1 tbsp cocoa powder. Deepens it and hides the earthiness completely.

Can I just blend the mushroom coffee grounds in?

No. Protein Mushroom Coffee is USDA organic ground arabica, not an instant powder - blending the grounds gives you a gritty smoothie. Brew it first, chill it, then blend.

How much protein is in it?

25 grams. The mushroom coffee contributes 6g of collagen protein; the Greek yogurt, almond butter and banana bring the rest.

Which mushrooms are in it?

Five - Lion's Mane, Chaga, Reishi, Turkey Tail and Maitake - all 10:1 extracts from fruiting bodies with no less than 30% beta-glucans and no mycelium. There's also L-theanine, often used to support focus and a calm, clear energy.

Can I make it the night before?
