
Protein Coffee Energy Bites

- Mixing bowl

Ingredients
- ✓1 cup rolled oats
- ✓4 scoops Mocha Protein Coffee (two 30g servings)
- ✓1/2 cup natural peanut butter
- ✓1/4 cup honey or maple syrup
- ✓2 tbsp mini dark chocolate chips
- ✓A pinch of salt
Instructions
- 1Stir the oats, protein coffee and salt together dry, breaking up any lumps.
- 2Add the peanut butter and honey. Mix hard - it will look too dry at first and come together after about a minute.
- 3Fold in the chocolate chips.
- 4Chill the mixture 30 minutes. Do not skip this; warm mix won't hold a ball.
- 5Roll into 12 bites. Keep them in a sealed container in the fridge.

Why This Works
The chilling step is the difference between bites and crumbs. Peanut butter is solid enough to bind at fridge temperature and too soft at room temperature, so a warm mixture falls apart in your hands no matter how hard you press. Thirty minutes cold and it rolls cleanly.
Protein powder is thirsty, so this needs more wet binder than a standard energy ball recipe - half a cup of peanut butter to one cup of oats is a much higher ratio than usual, and it's deliberate. - Vanilla bites: French Vanilla Protein Coffee with almond butter and a pinch of cinnamon.
- Lower sugar: drop the honey to 2 tbsp and add 2 tbsp milk. About 5g of added sugar a bite.
- Coconut: roll the finished bites in desiccated coconut.
- Nut-free: sunflower seed butter works exactly the same way.
Common Questions
Why won't my energy bites hold together?
Almost always the mix wasn't chilled. Peanut butter binds at fridge temperature and not at room temperature. Give it 30 minutes cold before rolling. If it's still crumbly, add a tablespoon of milk - protein powder absorbs more liquid than oats alone.
How much protein is in each bite?
8 grams. The batch uses two full 30g servings of Mocha Protein Coffee - 44g of grass-fed whey - plus peanut butter and oats, split across 12 bites.
How long do they keep?

Can I make them without honey?
