You'll Need

Ingredients

  • 1 1/2 cups rolled oats
  • 4 scoops French Vanilla Protein Coffee (two 30g servings)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1/3 cup milk of choice
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup blueberries, fresh or frozen

Instructions

  1. 1Heat the oven to 350F and line a 12-cup muffin tin.
  2. 2Blend the rolled oats in a blender or food processor until they look like coarse flour, about 30 seconds.
  3. 3Add everything except the blueberries to the blender and pulse until just smooth. Don't run it long.
  4. 4Fold the blueberries in by hand.
  5. 5Divide between the cups and bake 18 to 20 minutes, until the tops spring back.
  6. 6Cool 5 minutes in the tin, then move to a rack.
